Fish n’ Chips
Okay, so when you see what I’ve made you know this recipe is a bit of a play on words. BUT it IS also a healthier version of the original Fish n’ Chips.
Do you like to eat fish? I do! Have you eaten Fish n’ Chips before?
The original Fish n’ Chips is traditionally made with cod fish that’s in this fluffy crunchy deep-fried batter (yum!).
Fries are the chips served with malt vinegar (more yum!) on newspaper-a fish eaters delight!

Better than Cracker Barrel Hash Brown Casserole
Actually that was one of my reviews. And my family has declared,
“This IS Better than Cracker Barrels Hash Brown Casserole!”
I was really flattered by the compliment my family gave me. If you’ve read about my critics and testers, they are my family & friends.
And when they don’t like something it feels harsh & it stings my ego. It’s hard not to take it personal. But they do not cut me any slack just because it’s me.
However, when they love something, they rave- it disappears and the request are made often. Those are the times I feel like I’ve won Chopped on the Food Network.

The BEST D@mn Chili Recipe Ever!
It’s #Snowmageddon! Many in the USA woke up to cold weather and a snowy Saturday.
What a change! Just 13 days ago it was Christmas Eve 2016 and we were in shorts with 70 degree weather.
How is the weather where you live? What do you do to prepare for snowy winter weather?
I make sure we have flashlights, candles, wood for our fire, clean clothes, everything is charged and we have food.
But I want comfort food like chili or soup, hot cocoa and made from scratch cinnamon rolls.
I picked up some milk & bread!
There is always this mad dash for milk and bread in South Carolina when there is any threat of inclement weather.
And this really pokes fun at those I’ve seen push you out of their way at the grocery store just to stock up on milk & bread when this threat is announced.
In all fairness to those that have this knee jerk reaction, we have had some bad storms that have left us without power for days in the past.
So YES, I did pick up milk and bread. But really because we were out after 2 weeks off from the Christmas holiday.

Happy New Year- 2017 is here!!
I’ve written goals or is it resolutions (??) for myself for 2017. What about you-how was your holiday? Do you have any resolutions, goals or changes you are making?
Are your Christmas decorations still up?
I started taking down all Christmas decorations the day after. But one year the decorations inside stayed up until March.
That won’t happen again although my kids would love that!
Resolution-Goals-or whatever we want to call it, I’ve set my mind to make some changes to my daily routine, nutrition and some financial goals. You know, the typical stuff.

LEFTOVER HOLIDAY HAM, TURKEY OR MASHED POTATOES…
What in the world to do with them?? And how I’ve learned to approach them by
Growing up, leftovers were not common in my home.
I think because there were 6 of us to cook for (my parents, my sister & brothers). So if there were any extras on the table you can bet the men in my home polished them off.
Leftovers were a challenge to me after I got married. I honestly didn’t know what to do with them.
I think leftovers just frustrated me, because I only saw them as eating the same meal over & over again.
Why would I eat the same thing for several days?
Since eating leftovers was not something I did often, I guess I avoided them.
Which makes me cringe for all the times I’d end up throwing out food because I wouldn’t eat it.
EEK!!! I feel awful admitting that.
Have you done this before, too? I am sure I’m not the only that’s done that.
I’m not always looking to reinvent leftovers, unless the leftovers are a plenty.
